Another recipe idea for your wild turkey harvest. This is by far my favorite wild turkey recipe!

I N G R E D I E N T S


Meat

  • 3-4lb of wild turkey breast (you can use turkey or chicken breast)

  • 1 c of water

  • 1 tbsp of salt

  • corn starch OR arrowroot powder

  • to taste garlic powder, onion powder, salt and pepper

  • avocado oil

Gluten free waffles

  • 3/4 c of gluten free flour OR ground oats

  • 1/4 c of corn starch OR arrowroot powder

  • 1 tbsp of organic cane sugar

  • 1/2 tsp of baking powder

  • 1/4 tsp of baking soda

  • 1 c of milk

  • 1/3 c of avocado oil OR oil of your choice

  • 1 egg

  • 1 tsp of pure vanilla extract

Aioli

  • 1 c of mayo

  • 1/4 c or less of hot sauce

  • 1/2 tsp of garlic powder

  • 1 tbsp of agave

Sweet and spicy sauce

  • 1 c of water

  • 1/4 c or less of hot sauce

  • 1/4 c of liquid aminos, coconut aminos, OR soy sauce

  • 2 tbsp of vinegar

  • 1/4 c of brown sugar

  • 1/4 c of honey

  • 2 tbsp of corn starch OR arrowroot powder

  • 1 tbsp of minced garlic OR garlic powder


I N S T R U C T I O N S

  1. Trim fat and skin off of the turkey breast. Allow the turkey breast to brine in salt water for 24-48 hours. This is going to allow the salt to soak into the breast for more flavor and to prevent it from drying out when cooking.

  2. Mix up all ingredients of the aioli sauce and place in the refrigerator, allowing the flavors to all settle while you prepare the remainder.

  3. Rinse meat and cut into thin strips.

  4. Toss the meat with corn starch and spices. Adjust according to texture; you're looking for a sticky consistency.

  5. Pour oil to cover just the bottom of the pan. Turn on medium-low heat (depending on your stove top) and wait for the oil to heat up.

  6. Once the oil is done heating up, add turkey strips. Cook until crispy on all sides.

  7. Once the turkey is done, it's time to make the sweet and spicy sauce. Mix all ingredients together in a sauce pan. Turn the heat to medium. Bring the sauce to a slow simmer and stir often. Cook until sauce is thick enough for your liking and remove from the heat.

  8. Pour sauce over turkey and toss. Add just enough to coat the turkey and save the remainder for topping.

  9. For the waffles, mix together all dry ingredients. In the same bowl of dry ingredients, make well in the middle and add in the wet ingredients. Stir and add too prepared waffle maker.

  10. Top a finished waffle with turkey, aioli, and agave/maple syrup and ENJOY!
